Most Versatile and Quick Side Dish

When I got married and started having kids, I remember thinking, “The days of having popcorn and wine for dinner are, indeed, over.” All of the sudden, I felt like I needed to figure out how to “whip up” dinner like my mom, and every mom, seems to know how to do instinctively. Side dishes felt a little like a foreign concept to me, who, previously, had eaten a lot of oatmeal and PB&J for dinner. When I came across the Green Beans Amandine recipe in the first *Magnolia Table cookbook, it was so easy and so good it quickly became a monthly side dish staple in our house.

Meal Ideas that Pair with Magnolia Table Green Beans

First off, “amandine” simply means a dish you top with slivered almonds in French. No need to get worried that this dish is somehow fancy and difficult. Secondly, our family eats these green beans regularly with sheet-pan salmon, and Easy Weeknight Rice Pilaf. It’s one of our favorite weeknight meals. This recipe also goes great with roasted chicken legs (see photo), and grilled steak.

Toddler-friendly vegetable dish

The first time I made this, I remember being surprised to look over and see my toddler silently chowing down on them. There is brown sugar in this recipe, so the green beans taste sweet and pretty amazing. A bonus for kids (and adults).

Tip #1: Substitute Ideas

The recipe calls for dry sherry, or sherry vinegar, but I’ve found that any kind of white cooking wine substitutes great. Same goes for the apple cider vinegar. You can substitute balsamic vinegar, or red wine vinegar. Both would get the job done! Lastly, the recipe called for brown sugar. I will say brown sugar is preferable. If you are in a pinch, though, normal white sugar would still taste good (just not as rich of a flavor as brown sugar).

Magnolia Table Green Beans Amandine Side Dish

Quick, healthy, sweet- this green bean side dish is hard to beat!

Ingredients
  

  • Salt
  • 1.5 pounds green beans, ends snapped
  • 2 tbsp butter
  • 3 garlic cloves
  • 1/2 cup packed light brown sugar
  • 2 1/2 tbsp dry sherry or sherry vinegar
  • 1 c sliced almonds, toasted
  • 1/2 tsp pepper
  • 1 1/2 tsp apple cider vinegar

Instructions
 

  • Bring a large saucepan of generously salted water to a rolling boil. Add the green beans and cook until aldente, 6-8 minutes. Drain thoroughly and set aside.
  • While green beans cook, pour almonds into small skillet over medium heat and toast for a few minutes (until fragrant and slightly browned).
  • Return the saucepan to medium heat. Melt the butter, then add the garlic and sauté until softened, about 30 seconds. Whisk in the brown sugar, sherry, and cider vinegar. Add the green beans and toss until well coated.
  • Add the almonds, 1/2 teaspoon salt, and the pepper and toss until well combined. Remove from the heat. Transfer to a serving dish. Serve hot.
  • Store leftovers in a covered container in the refrigerator for up to 3 days.
