Mom’s Tortellini Soup
My Mom’s Tortellini Soup is a simple family favorite. Loaded with flavor and veggies, this soup is sure to become a favorite around your dinner table. Mom’s Tortellini Soup has so many memories attached to it for me. If it’s fall or winter and the whole family is getting together, you can bet my mom has this soup simmering on the stove. It’s a crowd-pleaser- hearty enough to please the hungry men of the family, healthy enough to please the health-nuts of the family, and when served with crusty bread, the kids are all thrilled.
I love that this recipe uses ground sausage as the protein. I don’t know about you, but I usually have this on hand. The broth is a mixture of beef broth and red wine which warms my bones on a chilly evening. Using frozen tortellini is super easy.

To make my Mom’s Tortellini Soup you’ll need the following ingredients:
- Ground Italian sausage
- Onion
- Garlic
- Beef broth
- Diced canned tomatoes
- Canned tomato sauce
- Red wine
- Shredded carrots
- White sugar
- Italian seasoning
- Zucchini
- Frozen tortellini
- Shredded parmesan
To make my Mom’s Tortellini Soup you’ll need the following supplies:
- Large chopping knife
- Cutting board
- Large soup pot with lid
- Ladle for serving
Mom’s Tortellini Soup
Ingredients
- 1 lb ground Italian sausage
- 1 tbsp olive oil
- 1 large onion , yellow or white, diced
- 2 garlic cloves
- 32 oz beef broth , 1 box
- 1 cup red wine
- 28 oz diced canned tomatoes
- 8 oz canned tomato sauce
- 2 large carrots, shredded , or 5 oz (1/2 bag of pre-shredded)
- 1 tbsp white sugar
- 2 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 2 small zucchini , halved lengthwise, then sliced
- 9 oz frozen tortellini
- ½ c shredded parmesan
Instructions
- Start by heating a large soup pot over medium heat. While the pot heats up, dice the onion and slice the zucchini (and shred the carrots if you didn't buy pre-shredded).
- Drizzle the olive oil into the hot soup pot. Add the onion. Stir and cook for about 2-3 minutes. Add the sausage. Break apart and cook until cooked through, about 10 minutes. Add the garlic cloves. Stir and cook for about 2 minutes, until fragrant.
- Add beef broth, wine, tomatoes, and tomato sauce. Bring to a boil. While you wait for the soup to boil, begin to heat the water for the frozen tortellini (see tortellini bag instructions for the amount of water needed).
- Once the soup is boiling add carrots, sugar, Italian seasoning, salt, and pepper. Once the tortellini water is boiling, add frozen tortellini (see tortellini bag for exact boil time).
- Allow soup to simmer for anywhere from 5-30 minutes. The longer it simmers, the richer the flavor. However, I rarely have the time to let it simmer longer than 5 minutes. It will still be delicious!
- *To serve, start by putting a serving of cooked tortellini in the bottom of a soup bowl. Then, ladle a generous amount of soup on top. Top with as much shredded parmesan as you like.
