Trader Joe’s Egg Casserole

Trader Joe’s Egg Casserole is full of toasty bread, lots of veggies, bacon, sausage, and, of course, eggs! Lots of protein from the eggs, milk, meats, and cheese, it’s a great, hearty way to fill up you and your family up for the day ahead.


What makes this recipe special?

This recipe is convenient because if you are fortunate enough to live near a Trader Joe’s, you can get all the ingredients there. Don’t fret if you do not have a Trader Joe’s (shoutout to all my Mahomet, IL and Waco, TX family and friends), all of the ingredients can be purchased at a normal grocery store.

Trader Joe’s Egg Casserole has onions, bell peppers, and spinach- more veggies than your average egg casserole recipe you may find. It also has bacon AND sausage which I think is an added bonus. Lastly, instead of the bread being soaked in the egg casserole mixture overnight like a lot of egg casserole recipes, this bread is less soggy, and more toasty which I love (it’s also ready within an hour which is very convenient).

However, if you need this to be an overnight casserole for your hosting needs, it can easily be done! Make and mix the whole casserole the night before, refrigerate, then simply mix in the bread right before you bake it in the morning.



Ingredients & Supplies

You’ll need the following ingredients for Trader Joe’s Egg Casserole:

  • TJ’s ground sausage
  • TJ’s bacon
  • TJ’s spinach
  • TJ’s frozen bell pepper
  • TJ’s onion
  • TJ’s 100% Whole Wheat Bread
  • TJ’s eggs
  • TJ’s milk
  • TJ’s shredded cheddar cheese
  • Salt
  • Garlic salt
  • Pepper

You’ll need the following supplies for Trader Joe’s Egg Casserole:

  • Medium-sized frying pan
  • Wooden spoon
  • Whisk
  • Larg bowl
  • 9×13 pan
  • Oven
  • Stove

Trader Joe’s Egg Casserole: Let’s get cooking!

Preheat oven to 375℉. Then, use kitchen scissors to cut the bacon into bit-sized pieces. Brown the sausage and cook the bacon bits in a medium-sized frying pan until sausage is no longer pink and the bacon is crispy.

While the meat is cooking, cut the bead into even-sized, bite-sized squares. Pour the cooked meat from the frying pan into a large bowl and set aside. Do not drain the fat! The juices make the casserole more flavorful.

Next add the butter to the same skillet the meat was cooked in without cleaning it out. Add the bell pepper, onion, and spinach into the skillet. Cook the veggies until they are thawed and slightly softened, and the spinach is wilted and cooked down.

While the veggies cook, in the same large bowl the meat is in, whisk in the eggs, milk, cheese, salt, garlic salt, and pepper.

Then, stir in the veggies. Lastly, mix in the cubed bread with a spatula just until everything is incorporated.

Smear a 1/2 tbsp of softened butter onto a small piece of paper towel. Smear the softened butter all over the bottom and sides of a 9×13 pan. Pour the casserole mixture into the pan, and bake at 375℉ for 25 minutes. Then, lay a piece of foil lightly over the top of the casserole, and continue to bake for 15 more minutes (40 minutes in total bake time).

Let rest for about 10 minutes once you take it out to let the egg finish setting. Enjoy!

  • ½ lb ground sausage
  • 5 slices bacon
  • 2 handfuls spinach
  • ¾ cup *bell pepper, chopped and frozen
  • ¾ cup *onion, chopped and frozen
  • 1 T butter (+ 1/2 T for buttering the pan)
  • 4-6 slices *whole wheat bread
  • 1 cup shredded cheddar cheese
  • 10 eggs
  • cup *milk
  • ½ tsp salt
  • ½ tsp garlic salt
  • 1 tsp pepper

Instructions

Notes

*You can use fresh, diced bell pepper and onion. It will add a little bit of prep time on the front-end to chop them. 
*Whole wheat bread works the best in this recipe because it is a little heartier, therefore it does not get soggy.  
*I use whole milk, but you can use whatever milk you’d like.
