Quick and Easy Sheet Pan Nachos

Quick and Easy Sheet Pan Nachos is one of the simplest ways to transform last night's pork, beef, or chicken into a delicious meal that no one will ever know was made from leftovers. Perfect for a lazy weeknight meal, a weekend lunch, or while you're watching the game!

Ingredients
  

  • ½ bag tortilla chips (roughly 5 oz for 2-3 people)
  • cups shredded pork*
  • ½ cup canned black beans, drained and rinsed
  • ¼ cup red onion, diced
  • 1 cup shredded cheddar cheese
  • ¼ cup cilantro, roughly chopped
  • 2 tsp fajita or taco seasoning
  • 1 lime cut in wedges for serving

Instructions
 

  • Preheat the oven to broil (the highest temp your oven will go). Heat a medium skillet on medium-high heat.
  • While the pan heats up, dice the red onion, drain and rinse the black beans, and roughly chop the cilantro.
    Drizzle olive oil in the skillet once hot, and add the shredded pork, red onion, and black beans. Stir and cook for 3-5 minutes, until heated through.
  • Add the chips to the sheet pan. Sprinkle the fajita or taco seasoning evenly over the chips. Evenly pour the shredded pork mixture on top of the seasoned chips. Sprinkle with shredded cheese. Put the sheet pan in the hot oven for 1-2 minutes (do not walk away!). Watch closely until the cheese is melted and a few chips begin to darken in color.
  • Take nachos out of the oven and sprinkle with cilantro. Serve with lime wedges. Enjoy!
