Slow Cooker Pot Roast

This Slow Cooker Pot Roast recipe is comfort food that is flavorful and easy to make. Lots of veggies, tender meat, and minimal prep time. My family loves this recipe, and I hope yours does too!

Ingredients
  

  • 3-5 lb *beef roast
  • 1 packet brown gravy seasoning packet
  • 1 packet ranch seasoning packet
  • 1 packet Italian dressing packet
  • 1 lb **potatoes
  • 1 head celery (5-6 stalks)
  • 1 lb carrots
  • cup water

Instructions
 

  • Start by placing the roast in the crock pot. Pour in water. Mix together all three seasoning packets with a fork in a small dish. Pour seasoning on top of roast. Turn slow cooker on low and cook for 5 hours.
  • Chop the vegetables into bite-sized chunks. After the 5 hours of cooking time, add the veggies. Continue to cook on low for an additional 2-3 hours until the veggies are softened and the roast is tender.
  • Begin cooking the rice by package directions. Take out the roast. It should be very tender and shred relatively easily. After shredding the meat, return it to the crock pot. Serve veggies, meat, and the juice from the crock pot over rice with crusty bread. Enjoy!

Notes

*Any kind of beef roast will work for this recipe- very convenient! 
**I like using the petite medley gourmet potatoes because they add some color, but any potatoes will work great.
